Description

This pizza is called 'Marinara' not because it is packed with shrimp, squid, and other seafood. Marinara is a traditional Italian sauce named for its resemblance to a marinade. It is believed that the mixture of sour tomato juice with spices and herbs could be used to marinate meat and fish, helping them to last longer and become tender. Italian fishermen utilized this method, as they often took only tough salted meat on their voyages and grew tired of fish. Interestingly, marinara was the first sauce to be sold in cans in Italy. It doesn’t actually contain any seafood, though sometimes a couple of anchovies are mashed into the sauce for a bit of zest.

  • Dry yeast 0 oz
  • Baking Tomatoes 15 oz
  • Sugar 0 oz
  • Olive Oil 0 fl oz
  • Garlic 1 clove
  • Onion 0 oz
  • Oregano ¼ spoons
  • Basil 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Prepare all the ingredients.

Mix room temperature water, 8 grams of salt, and 2 tablespoons of flour.

Add the yeast and sugar to the mixture. Stir again.

Incorporate the remaining flour and knead the dough. You can knead the dough by hand or using a stand mixer with a dough hook.

At the end, add 15 ml of olive oil.

Shape the dough into a ball and place it in a bowl greased with olive oil. Cover with plastic wrap or a damp towel and let it rest in a warm place for 1.5 to 2 hours.

To achieve a light and airy dough, it's important to knead it properly. To do this, take the dough with both hands in the middle and lift it (it should fold in half). Then, slap it down on the table. Rotate it 90 degrees, lift it again, and slap it down once more. Continue this process until the dough easily releases from the surface of the table.

Divide the dough into 2 balls. Place them on a deep baking tray or in a container greased with olive oil. Cover with a lid or plastic wrap and let it sit at room temperature for 4 hours or in the refrigerator overnight.

For the sauce, slice the onion into feathers. Chop the garlic coarsely.

Heat olive oil in a skillet and sauté the onion until it becomes translucent. Add the garlic.

Place the tomatoes along with their juice in the skillet. Mash them with a spatula.

Add oregano and basil leaves. Simmer for 15 minutes over low heat.

Blend the finished sauce until smooth. Season with salt and pepper. Allow to cool.

From the prepared dough, shape the patties by hand, stretching the dough from the center outwards with your fingers.

Spread the sauce over the pizza dough and bake in the oven at 445°F for 5–10 minutes, until golden brown.
