  • Smoked haddock fillet 30 oz
  • Ocean salt 0 oz
  • Ground Black Pepper 1 tablespoon
  • Powdered Sugar 0 oz
  • Sherry 1 tablespoon
  • Semi-soft cream cheese 5 oz
  • Chives 2 tablespoons
  • Dijon Mustard 2 teaspoons
  • Cream (40%) 0 fl oz
  • Lemon 6 pieces

Step-by-Step Guide

Step 1

Line the bottom of a large tray with plastic wrap. Place the boneless salmon fillet on the tray. In a bowl, mix the salt, sugar, pepper, and sherry. Marinate the fish with the mixture and refrigerate it for one to two days.

Step 2

Whip the cream cheese with a wooden spoon. Add salt, mustard, chives, and whipped cream. Refrigerate for one day.

Step 3

Remove excess brine from the salmon. Cut into 24 equal pieces. Arrange the fish in a fan shape on chilled serving plates. Before serving, add a spoonful of the cream on each plate. Garnish with chives and lemon.
