- Milk 0 qt
- Kefir 0 qt
- Chicken Egg 6 pieces
- Salt to taste
- Mild Chili Spice ⅓ spoons
- Garlic 1 clove
- Ground Cumin a pinch
- Dill to taste
- Cilantro to taste
- Scallions to taste
Step-by-Step Guide
Step 1
Pour the milk and kefir into a pot and place it on the stove. Without bringing it to a boil, slowly drizzle in the lightly beaten eggs mixed with salt into the hot milk-kefir mixture. Bring to a boil and cook this mixture, stirring, over low heat for a few minutes until the whey separates.
Step 2
Remove from heat, let it cool for 1–2 minutes, and add finely chopped herbs and red pepper, then squeeze in a clove of garlic (or any seasoning you prefer).
Step 3
Pour the mixture into a sieve lined with two layers of cheesecloth. Smooth the cheese mixture with a spoon.
Step 4
Tie the cheesecloth in a knot and allow the whey to drain. Then, unwrap the cheesecloth, cover the formed round cheese with the edge of the cloth, place a small plate on top, and put some weight on the plate (for example, a jar filled with water and covered with a lid will work).
Step 5
Refrigerate for a few hours. That's it.
