Herring Carpaccio
Ingredients
- Lightly Salted Red Fish 1 piece
- Unrefined Sunflower Oil 0 fl oz
- Kohlrabi 0 oz
- Artichoke bottoms 0 oz
- Pickled Apples 0 oz
- White Balsamic Cream to taste
- Creamy Horseradish to taste
- Aioli Sauce to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Filet the herring.
Step 3
Wrap the four fillets in plastic wrap, shaping them into a log, and place them in the freezer overnight.
Step 4
Thinly slice the frozen sausage. The easiest way to do this is with a slicer. If you don't have a slicer, you can use a sharp knife.
Step 5
Arrange the herring slices on a flat plate.
Step 6
Brush them with aromatic oil.
Step 7
Dice the pickled apples, kohlrabi, and artichokes into small cubes and dress them with fragrant oil.
Step 8
Arrange the prepared cubes on the carpaccio.
Step 9
Drizzle with balsamic vinegar, creamy horseradish, and aioli. The chef made a jelly from the balsamic vinegar and snow from the horseradish, but you can skip this at home.
Step 10
Garnish the carpaccio with fresh herbs and serve immediately.
