- Red Wine Vinegar 0 fl oz
- Ginger-Garlic Paste 1 tablespoon
- Fresh Rose Hips 1 teaspoon
- Fresh basil leaves 1 teaspoon
- Chopped Sage Leaves 1 teaspoon
- Fresh basil leaves 1 teaspoon
- Salt ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Orange Bell Peppers 1 piece
- Orange Bell Peppers 1 piece
- Courgette 3 pieces
- Orange Bell Peppers 1 piece
- Onion 2 heads
- Eggplants 1 piece
Step-by-Step Guide
Step 1
In a large bowl, mix olive oil, vinegar, garlic, rosemary, thyme, basil, oregano, salt, and black pepper.
Step 2
Clean the bell peppers and cut them into large pieces. Cut the zucchini, eggplant, and onion into large pieces (if using baby vegetables, leave them whole). Place the vegetables in the marinade, mix, cover with plastic wrap, and refrigerate for 2 hours.
Step 3
Preheat the grill.
Step 4
Place the vegetables on a greased grill rack and grill, basting with the marinade occasionally, for about 10-12 minutes until tender. Serve warm.
