Herb Casserole
Ingredients
- Sorrel 20 oz
- Parsley 1 bunch
- Rice 1 cup
- Milk 15 fl oz
- Breadcrumbs 2 tablespoons
- Whole egg 4 pieces
Step-by-Step Guide
Step 1
Wash and chop the sorrel (500 grams). Add coarsely chopped parsley (1 bunch). Salt the chopped greens and sauté over medium heat for 5–6 minutes. Then drain in a colander, squeeze out excess moisture, and finely chop.
Step 2
Cook half a cup of rice with 500 ml of milk, cool, and mix with the herb puree.
Step 3
Add 2 tablespoons of breadcrumbs and 4–5 yolks. Mix the mass well. Finally, fold in the whipped egg whites gently.
Step 4
Transfer the mixture to a greased and breadcrumb-dusted baking dish. Then bake and serve hot.
