
Healthy Muffins with Pumpkin and Raisins

Description
In the standard version of the recipe, the sugar substitute can be replaced with sugar (white or brown), and any type of raisins can be used. You can use fresh, frozen, or pureed pumpkin.
Ingredients
- Oats 0 oz
- Egg 1 piece
- Pumpkin 5 oz
- Light raisins 0 oz
- Baking Powder 0 oz
- Cinnamon to taste
- Ground Ginger to taste
- Nutmeg to taste
- Sugar Substitute to taste
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Blend the pumpkin into a puree. If you have fresh pumpkin, boil and puree it. I simply thawed and pureed the frozen pumpkin.
Step 2
Grind the oats into flour, mix with spices and baking powder.
Step 3
Mix the egg, sugar substitute, and olive oil.
Step 4
Add the dry ingredients to the wet ingredients and mix thoroughly.
Step 5
Add the raisins (previously soaked in hot water) to the resulting batter.
Step 6
Bake in silicone molds at 355°F for 20 minutes.
