  • Apple juice with pulp 5 fl oz
  • Brown Sugar 5 oz
  • Bourbon 0 fl oz
  • Chopped almonds 10 oz
  • Black Pomegranate Molasses 0 fl oz
  • English Dry Mustard 3 tablespoons
  • Smoked Ham on the Bone 20 lbs

Step-by-Step Guide

Step 1

In a small saucepan, combine the juice and bourbon, bring to a boil, and cook until reduced to one-third of a cup, about 6 minutes. In a bowl, mix the sugar, pecans, molasses, and mustard, then add the bourbon mixture. Stir well until it forms a paste.

Step 2

Preheat the oven to 160°C. Line a large baking dish with foil. Remove the skin and excess fat from the ham and place it in the dish. Bake until the internal temperature of the meat reaches 57°C, about 10 minutes per 450 g, for a total of about 3 hours.

Step 3

Remove the ham from the oven and increase the temperature to 220°C. Generously coat the meat with the glaze and return it to the oven for 25 minutes until a golden crust forms. Let it rest in the dish for 20–45 minutes. Serve with chutney and fresh bread.
