Grilled Zucchini with Walnuts and Yogurt-Lime Sauce
Ingredients
- Walnuts 3 tablespoons
- Garlic 2 cloves
- Lime 1 piece
- Tarragon 5 stems
- Walnuts 0 oz
- Natural Yogurt 5 oz
- Sweet Red Onion 1 head
- Courgette 30 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Slice the zucchini into long thin strips lengthwise.
Step 3
In a skillet, heat half of the oil and add the minced garlic, tarragon, 1 tablespoon of lime juice, walnuts, salt, and pepper. Lightly warm while stirring.
Step 4
In a small bowl, mix the finely grated lime zest, yogurt, and finely chopped onion, then lightly salt and pepper. Transfer to a small serving bowl and drizzle with oil.
Step 5
Season the remaining oil with salt and pepper and brush it onto the zucchini. Place on the grill and cook for about 4 minutes, turning until golden brown.
Step 6
Transfer to a large plate, drizzle with the prepared dressing, and serve alongside the yogurt-lime sauce.
