- Apple Wine 0 fl oz
- Grated Ginger Root 0 oz
- Lime Juice 0 fl oz
- Hot smoked pink salmon 0 oz
- Mayonnaise 5 oz
Step-by-Step Guide
Step 1
For the ponzu sauce, mix soy sauce, rice wine, ginger root, lime zest, lime juice, and smoked tuna flakes, and let it steep for a day. Strain the sauce and mix it with mayonnaise. Transfer to a siphon.
Step 2
Cut the zucchini into thin strips. Mix olive oil and ginger juice, drizzle the mixture over the zucchini, and grill until cooked.
Step 3
Place the zucchini on a board, dispense a few drops of ponzu sauce from the siphon, and garnish with pike caviar. Serve with a wedge and zest of fresh lime.
