
Grilled Zucchini with Mint, Garlic, and Lemon

Ingredients
- Courgette 20 oz
- Garlic 1 clove
- Olive Oil 2 tablespoons
- Lemon 1 piece
- Grated Pecorino Pepato Cheese 0 oz
- Ground ancho chili pepper 2 pieces
- Mint Leaves 0 oz
- Coarse Salt to taste
Step-by-Step Guide
Step 1
Preheat the grill.
Step 2
Slice the zucchini lengthwise into thin 5mm slices. Transfer to a bowl and gently mix with the minced garlic and half of the olive oil.
Step 3
Place on the grill and cook for about 5 minutes until tender and golden brown, turning occasionally.
Step 4
Meanwhile, squeeze the juice from the lemon and grate the zest. Finely chop the chili, removing the seeds.
Step 5
Transfer the zucchini to a plate, drizzle with lemon juice, and sprinkle with zest and chili. Drizzle with the remaining olive oil and let cool.
Step 6
Before serving, sprinkle with Parmesan and chopped mint. Season with salt to taste.
