Ingredients
- Olive Oil 2 tablespoons
- Dijon Mustard 2 tablespoons
- Balsamic Vinegar ¼ cup
- Ground Black Pepper 1 teaspoon
- Salt ½ teaspoon
- Garlic 3 cloves
- Courgette 2 pieces
- Eggplants 1 piece
- Orange Bell Peppers 1 piece
- Spanish onions 4 pieces
- Porcini Mushrooms 4 pieces
- Vegetable Oil to taste
- Feta cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
For the vinaigrette, mix vinegar, mustard, olive oil, black pepper, salt, and minced garlic in a bowl.
Step 3
In a large bowl, place the halved eggplant, diced zucchini, and sliced bell peppers. Add ¼ cup of the vinaigrette and mix. Use the remaining vinaigrette to coat the cut onion and mushrooms.
Step 4
Place the vegetables and mushrooms on the oiled grill and cook for about 2.5-3 minutes on each side until the vegetables are browned and tender. Transfer to a plate and sprinkle with feta cheese shavings.
