
Grilled Stuffed Squid

Description
The squid should be small in size, just the bodies, without tentacles.
Ingredients
- Tomatoes 2 pieces
- Romaine lettuce 1½ pieces
- Capers 2 teaspoons
- Olive Oil 2½ tablespoons
- Lime 1 piece
- Coarse Salt to taste
- Ground Black Pepper to taste
- Squid 10 oz
Step-by-Step Guide
Step 1
Preheat the grill.
Step 2
In a small bowl, mix the finely chopped tomatoes, finely chopped lettuce, and capers.
Step 3
In another bowl, mix 2 tablespoons of olive oil, lime juice, and grated lime zest, season with salt and pepper. Drizzle over the salad and mix well.
Step 4
Meanwhile, rinse the squid bodies and dry them well. Cut them in half crosswise.
Step 5
In each piece of squid, place about 1 tablespoon of the salad. Brush with the remaining olive oil on top.
Step 6
Place on the grill and cook for about 5–7 minutes, carefully turning.
