Ingredients

  • Olive Oil 5 tablespoons
  • Squid 4 pieces
  • Garlic 5 cloves
  • Marinated cherries 10 oz
  • Mixed salad greens 5 oz
  • Chopped Sage Leaves 2 tablespoons
  • Dill 2 tablespoons
  • Dijon Mustard 1 tablespoon
  • Red Wine Vinegar 1 tablespoon
  • Capers 1 tablespoon
  • Anchovy fillet 4 pieces

Step-by-Step Guide

Step 1

Cut the squid in half lengthwise to create large pieces. Using a sharp knife, make shallow cuts across the surface of the squid without cutting all the way through, repeating on both sides. This will help maintain their shape during cooking.

Step 2

Then cut the squid into small pieces, about 4 cm wide, and transfer to a bowl. Mix 3 tablespoons of oil and 3 minced cloves of garlic, pour over the squid, and mix well. Cover with plastic wrap and refrigerate for 30 minutes.

Step 3

In a blender, combine all ingredients except the salad greens and tomatoes, and blend until smooth.

Step 4

Preheat the grill, pat the squid dry, and cook for 1-2 minutes. Transfer to a bowl with the salsa verde and mix well. On plates, arrange the salad greens, top with halved cherry tomatoes and squid, season with salt, and serve.
