Grilled Shrimp with Pineapple Salsa
Ingredients
- Pineapple ¾ piece
- Spanish onions 0 oz
- Habanero Pepper 1 tablespoon
- Chopped Green Onions 1 tablespoon
- Apple Cider Vinegar 1 tablespoon
- Honey 1 teaspoon
- Fresh Mint 2 tablespoons
- Salt ¼ teaspoon
- Lime Juice 2 tablespoons
- Mild Chili Spice ¼ teaspoon
- Peeled Cooked Shrimp 24 pieces
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
In a small bowl, mix finely chopped pineapple, finely chopped red onion, minced jalapeño pepper, cilantro, vinegar, and honey.
Step 3
In a large bowl, combine finely chopped mint, lime juice, salt, chili powder, and shrimp. Gently mix and thread 3 shrimp onto each of 8 wooden skewers. Place the skewers on an oiled grill and cook for about 1.5 minutes on each side until done. Transfer to plates and serve with pineapple salsa.
