Grilled Ratatouille
Ingredients
- Eggplants 2 pieces
- Sweet Pepper 2 pieces
- Courgette 1 piece
- Tomatoes 3 pieces
- Spanish onions 2 heads
- Fresh basil leaves 0 oz
- Olive Oil 5 fl oz
- Garlic 3 cloves
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the eggplants into pieces about 0.7 mm to 1 cm thick, do the same with the zucchini. Cut the bell pepper into large slices, the red onion into rings, and halve the tomatoes.
Step 2
Place a sheet of aluminum foil, folded in several layers for added strength, on the grill rack. Drizzle it with olive oil and grill the eggplants, zucchini, tomatoes, and onions on both sides until they are tender. In a deep bowl, combine olive oil with crushed garlic, pepper, and finely chopped basil.
Step 3
Toss the vegetables with the sauce and let them marinate.
