Grilled radicchio, pumpkin, and green onions

Ingredients

  • Radicchio Salad 20 oz
  • Butternut Squash 1 piece
  • Young zucchini 2 pieces
  • Green onion tops 1 bunch
  • Olive Oil 0.3 cups
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Lemon 1 piece

Step-by-Step Guide

Step 1

Preheat the grill or barbecue.

Step 2

Cut the radicchio into pieces, the pumpkin into slices, the zucchini into thick slices, and the green onions in half. Brush with olive oil, season with salt and pepper.

Step 3

Place the vegetables on the grill and cook until tender and slightly charred: green onions for about 3 minutes, pumpkin and zucchini for 4–5 minutes, radicchio for 10 minutes. Turn the vegetables constantly.

Step 4

Transfer the vegetables to a plate and drizzle with lemon juice.
