Grilled Polenta with Pepper and Basil Dressing
Ingredients
- Olive Oil 3 tablespoons
- Polenta 10 oz
- Red Long Chili Peppers 2 pieces
- Citrus Zest Mix 3 tablespoons
- Basil 1 bunch
- Garlic 1 clove
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill pan. Cut the polenta into 1 cm slices — you will need 6 pieces. Brush both sides with olive oil and place them on the pan. Grill for 2–3 minutes on each side until characteristic grill marks appear.
Step 2
To prepare the dressing, grill the peppers. Cut them into strips, remove the seeds, and dice them. Place in a bowl, drizzle with olive oil, add the zest, finely chopped basil, and garlic. Add salt, pepper, and mix well.
Step 3
Place the polenta on serving plates and drizzle with the dressing.
