Grilled halloumi with onion rings and mint vinaigrette
Ingredients
- Olive Oil 6 tablespoons
- Red Wine Vinegar 2 tablespoons
- Fresh Mint 2 tablespoons
- Dijon Mustard 2 teaspoons
- Garlic 1 clove
- Romaine lettuce 2 heads
- Spanish onions 1 head
- Halloumi Cheese 10 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill.
Step 2
In a bowl, mix the oil, vinegar, 1 tablespoon of chopped mint, mustard, and minced garlic. Season with salt and pepper.
Step 3
Brush the lettuce leaves and onion rings with the dressing and sprinkle with salt and pepper.
Step 4
Grill the onion rings for about 3 minutes on each side until soft and marked. Transfer to a plate, spacing them apart.
Step 5
Place the lettuce on the grill and cook for 2 minutes on each side until soft and marked. Arrange 2 leaves on each of 4 plates.
Step 6
Cut the halloumi into 8 pieces and place on the grill. Grill for about 2 minutes on each side until marked.
Step 7
Top the lettuce leaves with the onion rings and place the cheese on top. Drizzle with the dressing and sprinkle with the remaining mint. Serve immediately.
