Grilled eggplants
Ingredients
- Eggplants 25 oz
- Olive Oil 5 fl oz
- Dried Rosemary 1 tablespoon
- Lemon 1 piece
- Tahini 0 oz
- Garlic 1 clove
- Water 0 fl oz
- Feta cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Light the charcoal.
Step 2
Mix the tahini, minced garlic, and the juice of half a lemon. Season with salt and pepper, then add water. Set the sauce aside. The consistency should be similar to that of thick sour cream. If the sauce is too thick, add more water.
Step 3
Wash the eggplants and slice them in half lengthwise.
Step 4
Make cross cuts on each half.
Step 5
Mix the olive oil, oregano, ground black pepper, salt, and the juice of the remaining half lemon.
Step 6
Brush the eggplants with the oil mixture and immediately place them on the grill.
Step 7
Sear on both sides for 5 minutes.
Step 8
Arrange the cooked eggplants on a plate and drizzle with tahini sauce.
Step 9
Garnish the top with crumbled feta.
Step 10
Sprinkle with chopped parsley. Grilled eggplants can be served hot or cold.
