Grilled Beef Tongue
Ingredients
- Beef tongue 45 oz
- Olive Oil 1 teaspoon
- Ocean salt to taste
- Mixed Ground Peppers to taste
- Marinated cherries 5 oz
- Basil to taste
- Saffron a pinch
- Arugula to taste
Step-by-Step Guide
Step 1
Place the tongue in water and boil for 3 hours over medium heat after it starts boiling.
Step 2
Drain the water and place the tongue under cold running water for a few minutes.
Step 3
Peel the tongue.
Step 4
Slice the tongue.
Step 5
Heat a grill pan greased with oil.
Step 6
Lay out the slices.
Step 7
Add salt.
Step 8
Add pepper. Sear over high heat for 3–4 minutes.
Step 9
Flip it over.
Step 10
Add saffron.
Step 11
Add salt. Sear for 3 minutes.
Step 12
Place arugula on a plate. Top with the slices of tongue.
Step 13
Cut the cherry tomatoes in half.
Step 14
Add the cherry tomatoes and basil to the dish.
