Grilled baked potatoes with avocado cream
Ingredients
- Avocado 1 piece
- Mascarpone Cheese Unagrande 5 oz
- Salt to taste
- Meyer Lemon Juice 2 teaspoons
- Red Long Chili Peppers a pinch
- Salad Potatoes 4 pieces
- Olive Oil to taste
Step-by-Step Guide
Step 1
Light the grill and prepare good coals.
Step 2
In a bowl, mash the peeled and chopped avocado into a creamy consistency. Add the mascarpone and mix until smooth. Then add the lemon juice, salt, and red pepper. Mix and chill.
Step 3
Wash and dry the potatoes. Poke them in several places with a fork, drizzle with olive oil, and rub with salt. Wrap each potato in foil and place on the coals, baking for about 45 minutes until soft.
Step 4
Unwrap the foil and place the potatoes on plates. Make cross-shaped cuts on each and slightly open the potatoes. Add a bit of avocado cream on each and serve.
