Grilled asparagus with pepper and pine nut salsa
Ingredients
- Orange Bell Peppers 3 pieces
- Tomatoes 2 pieces
- Toasted Sesame 0 oz
- Spanish onions 1 head
- Olive Oil 2 tablespoons
- Balsamic Vinegar 2 tablespoons
- Asparagus 6 bunches
Step-by-Step Guide
Step 1
Preheat the grill well. Place the peppers on the grill and roast for 8–10 minutes until the skin is charred. Transfer to a bowl and cover with foil. Let sit for 10 minutes. Peel and finely chop.
Step 2
In a bowl, combine the peeled and finely chopped peppers, chopped tomatoes, finely chopped onion, pine nuts, vinegar, and half of the oil. Season with salt and pepper.
Step 3
Drizzle the asparagus with the remaining oil and place on the grill. Grill for 2–3 minutes until slightly tender.
Step 4
Transfer the asparagus to a serving dish and top with the salsa.
