  • Pitted Wild Apricots 6 pieces
  • Olive Oil 3 tablespoons
  • Thyme 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Pistachios 2 tablespoons
  • Arugula 5 oz
  • Balsamic Vinegar 1½ teaspoons
  • Goat cheese 5 oz

Step-by-Step Guide

Step 1

Preheat the grill or barbecue.

Step 2

In a bowl, mix halved apricots, 1 tablespoon of olive oil, salt, and pepper. Toss well and let sit for 10 minutes.

Step 3

Place the apricot halves on the grill and cook for 5 minutes, turning until golden and tender.

Step 4

Meanwhile, in a well-heated skillet, toast the pine nuts until golden, about 3 minutes. Transfer to a cutting board and chop. Place in a large bowl and add the vinegar, remaining olive oil, salt, and pepper. Add the arugula and mix well.

Step 5

Slice the cheese into 12 thin pieces and arrange on a plate. Top the cheese with the apricot halves and arugula.
