
Greens with Garlic

Description
A healthy festive Hanukkah side dish, rich in beta-carotene and vitamin C from a mix of autumn greens.
Ingredients
- Mustard Greens 5 oz
- Leafy Mustard 5 oz
- Chard 5 oz
- Kale 5 oz
- Olive Oil 3 tablespoons
- Garlic 8 cloves
- Spinach 15 oz
- Red Long Chili Peppers a pinch
Step-by-Step Guide
Step 1
Wash the greens thoroughly, remove the stems, and cut into strips of 4 cm.
Step 2
Take a large skillet or saucepan of salted water. Bring to a boil. Add the fresh greens to the water and hold for 4 minutes. Remove the blanched greens with a slotted spoon and immediately plunge into ice water to stop the color change. Remove with a slotted spoon, let drain, and set aside.
Step 3
Slice the garlic into paper-thin slices. Heat the oil and garlic in a large skillet over medium heat. Cook until the garlic is golden around the edges, about 8-10 minutes. Remove the garlic from the skillet with a small slotted spoon. Set aside.
Step 4
Increase the heat under the skillet with the oil to high. Add the greens and cook for 5 minutes. Add the spinach, season with salt, and add the red pepper. Cook until the spinach wilts, stirring (about 1 minute). Add the garlic and mix. Serve hot or at room temperature.
