
Green Tomatoes with Nuts

Description
A salad made from green tomatoes with nuts can be stored in the refrigerator in a tightly sealed jar for about a month.
Ingredients
- Green Tomatoes 20 oz
- Shelled walnuts ½ cup
- Coriander Seeds ½ teaspoon
- Imeretian saffron 1 teaspoon
- Khmeli-suneli 1 teaspoon
- Garlic ½ head
- Onion 1 head
- Chopped Cilantro 1 tablespoon
- Chopped Parsley 1 tablespoon
- Chopped dill 1 tablespoon
- Red Wine Vinegar 1 tablespoon
- Red Chili Pepper 1 piece
Step-by-Step Guide
Step 1
Cut the tomatoes into quarters, remove the seeds and core, then soak the remaining flesh in boiling water for 5 minutes, then squeeze well by hand and finely chop on a wooden board.
Step 2
Thoroughly crush the walnuts in a mortar, adding the coriander seeds, saffron, khmeli-suneli, and chopped chili pepper at the end.
Step 3
Chop the onion and garlic, place them together with the herbs in the mortar, and lightly crush.
Step 4
Dilute the resulting mixture with wine vinegar (the vinegar can be diluted with cold boiled water in a 1/1 ratio).
Step 5
Combine all the prepared ingredients, mix thoroughly, and serve.
