Ingredients

  • Mixed tomatoes of different colors 10 lbs
  • Turnips 0 lbs
  • Onion 0 lbs
  • Orange Bell Peppers 0 lbs
  • Salt to taste
  • Sugar 20 oz
  • Table vinegar 0 qt
  • Safflower Oil 10 fl oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Take a large enameled basin.

Step 2

Cut the green tomatoes into large wedges.

Step 3

Cut the bell pepper into large squares.

Step 4

Slice the onion into rings about 1 cm thick or into half-rings (if the bulbs are large).

Step 5

Slice the carrots into rounds or half-rounds (if the carrots are large).

Step 6

Mix all the ingredients, add salt and pepper to taste, mix again, and let sit for 5–6 hours to release juice.

Step 7

Drain the juice that has formed into an enameled pot, then add 1 bottle of table vinegar (0.5 liters), 250 grams of sunflower oil, and 100 grams of sugar, and place on low heat to bring to a boil.

Step 8

Pour the resulting marinade over the chopped vegetables, place on the heat, and simmer on low for about 30–35 minutes until the tomatoes become soft.

Step 9

Pack into sterilized jars and seal.
