Green tapioca pudding with green tea and pistachios
Ingredients
- Tapioca ⅓ cup
- Milk 3 cups
- Whole egg 3 pieces
- Sugar ½ cup
- Ocean salt ¼ teaspoon
- Green Tea (brick) 1½ teaspoons
- Unsalted peanuts, shelled 0 oz
- Whipped Cream to taste
- Raspberry leaves 5 oz
Step-by-Step Guide
Step 1
Soak the tapioca in 1 cup of room temperature milk for 1 hour.
Step 2
Whisk the egg yolks with the sugar and a pinch of salt.
Step 3
Combine the slightly swollen tapioca and the remaining milk in a cast-iron pot. Stir in the whipped egg mixture.
Step 4
Place the pot over medium heat and bring the mixture to a boil while stirring constantly for about 15 minutes. Reduce the heat to low and cook for another 20 minutes. The tapioca is ready when its pearls swell and become translucent. Remember to stir the tapioca constantly to prevent burning. After the time is up, remove the pot from heat and stir in the green tea powder. Mix in the crushed pistachios and let it cool slightly.
Step 5
Divide the tapioca into dessert cups and refrigerate overnight.
Step 6
Serve the puddings with fresh raspberries and whipped cream.
