Green Physalis Sauce

Ingredients

  • Physalis 5 oz
  • Garlic 4 cloves
  • Onion 2 heads
  • Jalapeño pepper 2 pieces
  • Sugar 1 teaspoon
  • Cilantro 1 bunch
  • Coarse Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Place the physalis, garlic, onion, and jalapeño in a 4-liter pot, cover with water up to 3 cm. Bring to a boil and cook for about 5 minutes until almost soft. Drain, reserving 1 cup of the cooking water.

Step 2

Transfer to a blender, add 1 cup of the reserved cooking water, sugar, cilantro, salt, and pepper; blend until the sauce has a chunky consistency. Transfer to a bowl and serve without reheating.
