Green Dressing for Vegetables

Ingredients
- Parsley 5 oz
- Scallions 5 oz
- Cilantro 0 oz
- Basil 0 oz
- Onion 1 head
- Olive Oil 5 fl oz
- Garlic 4 cloves
- Toasted Cumin Seeds 1 tablespoon
- Coriander essential oil 1 teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Peel and finely chop the onion.
Step 2
Peel the garlic and press it through a garlic press.
Step 3
Combine the onion and garlic and season with salt.
Step 4
Wash the herbs, dry them, and remove the tough stems (remove the stems completely from the basil).
Step 5
Finely chop all the herbs, add salt, and crush them with your hands to release their juices.
Step 6
Place a large skillet or saucepan over medium heat, pour in all the oil, and add the cumin and coriander seeds.
Step 7
Sauté until the spices become fragrant (about 2 minutes).
Step 8
Add the onion and garlic to the oil with the spices, reduce the heat to low, and sauté, stirring, until the onion and garlic are translucent (about 5 minutes).
Step 9
Pour the hot oil with the onion and garlic over the herbs and mix. Let it cool.
Step 10
The dressing can be left as is or blended with a blender. Drizzle the hot dressing over the vegetables and let it sit for 7 minutes.
