Green Beans with Shallots and Pancetta
Ingredients
- Salt to taste
- Chinese green beans 20 oz
- Pancetta 0 oz
- Shallot 3 pieces
- Butter 2 teaspoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In the fat rendered from the pancetta, sauté the finely chopped shallots until golden brown.
Step 2
Then add the butter, green beans, and pancetta to the skillet with the shallots. Season with salt and pepper and sauté for a few minutes, then serve immediately.
Step 3
Trim the ends of the green beans and boil in salted water for 3–4 minutes, drain, and immediately transfer to a bowl of ice water to preserve the color. Dry well.
Step 4
Heat a skillet over medium heat and add the finely chopped pancetta. Sauté, stirring, for 2–3 minutes until golden brown. Transfer to a plate.
