Ingredients

  • Olive Oil 2 tablespoons
  • Shelled pumpkin seeds ½ cup
  • Chinese green beans 15 oz
  • Coarse Salt to taste
  • Fresh Rose Hips 2 teaspoons
  • Garlic 1 clove

Step-by-Step Guide

Step 1

Boil the green beans in salted boiling water until tender but still slightly crisp and vibrant in color, about 5 minutes. Drain and dry well. Cut into small pieces.

Step 2

Heat 1 tablespoon of oil in a skillet over medium heat. Add the pumpkin seeds and toast until golden, about 8 minutes. Season with salt and pepper and transfer to a plate.

Step 3

Heat the remaining oil in the same skillet over medium heat, add the minced garlic and rosemary, and stir for 15 seconds. Add the green beans and pumpkin seeds, and stir to heat through for about 2 minutes. Season with salt and pepper to taste.
