  • Garlic 3 cloves
  • Chinese green beans 15 oz
  • Soy Sauce 1 tablespoon
  • Grated Ginger Root 1 tablespoon
  • Rice Vinegar for Sushi 2 teaspoons
  • Sesame Oil ½ teaspoon
  • Toasted Cumin Seeds 1½ teaspoons
  • Vegetable Oil 1 tablespoon

Step 1

Trim the ends off the green beans. Then place them in a pot of boiling salted water. Cook for about 7-8 minutes, but watch to ensure they don't lose their color. Quickly drain and rinse under cold water. Pat dry.

Step 2

In a mortar, grind the garlic with a pinch of salt until smooth. Transfer to a large bowl and add the soy sauce, ginger, vinegar, and oil.

Step 3

Add the green beans and mix well. Sprinkle with toasted sesame seeds.
