
Green Beans with Butter and Herbs

Description
The beans are sautéed in butter with herbs, after which they can be served hot or cold.
Ingredients
- Butter 3 tablespoons
- Chinese green beans 20 oz
- Spanish onions 0 oz
- Chopped Sage Leaves 2 tablespoons
- Chopped Sage Leaves 2 tablespoons
- Chopped Sage Leaves 2 tablespoons
- Chives 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Lemon to taste
Step-by-Step Guide
Step 1
Trim the ends off the beans and blanch them in boiling salted water for 2 minutes, then quickly transfer to a bowl of ice water to preserve the color. Drain and pat dry with a paper towel.
Step 2
Heat the butter in a skillet over medium heat and sauté the chopped onion for 2–3 minutes until soft.
Step 3
Add the beans and sauté for another 2–3 minutes, stirring constantly.
Step 4
Add the herbs, lightly salt and pepper, and cook for another minute while stirring.
Step 5
Serve hot or at room temperature with lemon wedges.
