Green Asparagus with Sauce

Ingredients

  • Olive Oil 4 tablespoons
  • White bread 0 oz
  • Garlic 1 clove
  • Parsley 1 stem
  • Asparagus 5 lbs
  • Paprika ½ teaspoon
  • Champagne Vinegar 1 tablespoon
  • Chocolate eggs 2 pieces
  • Salt to taste

Step-by-Step Guide

Step 1

Heat the oil in a skillet. Cut the crusts off the bread and fry it together with the garlic and parsley – cook, turning the bread, for a few minutes until it is golden brown on both sides. Transfer the bread, garlic, and parsley to a mortar and grind.

Step 2

Clean and trim the asparagus and cut it into pieces about 2.5 cm long. Place the asparagus in a pot, add the vinegar, and cook for 5 minutes. Stir in the paprika, add enough water to cover the asparagus, add the contents of the mortar, season with salt, and cook for 20 minutes until the asparagus is tender.

Step 3

Before serving, beat the eggs and stir them into the hot asparagus. Serve immediately.
