Greek Quesadilla
Ingredients
- Tortillas 4 pieces
- Olive Oil 0 fl oz
- Fresh basil leaves 15 pieces
- Spanish onions 1 head
- Pitted olives 5 oz
- Melted Cheese 10 oz
- Fresh basil leaves 15 pieces
- Feta cheese 5 oz
- Orange Bell Peppers 2 pieces
- Chili Flakes to taste
- Red cocktail cherry 16 pieces
Step-by-Step Guide
Step 1
Chop the olives, onion, and spinach. Cut the cherry tomatoes in half. Dice the bell pepper. Tear the cheeses into pieces by hand.
Step 2
Sauté the bell pepper briefly in a splash of olive oil.
Step 3
Place the tortilla in the skillet. Lightly brush it with olive oil and flip it to the other side.
Step 4
Sprinkle half of the tortilla with spinach leaves, leaving the edge unseasoned.
Step 5
Repeat the same process with the onion, roasted peppers, tomatoes, olives, feta cheese, mozzarella, oregano, and chili pepper. Cover everything with the remaining half of the tortilla.
Step 6
Preheat a skillet or grill, greasing it with oil if necessary. Carefully place the assembled quesadillas on the skillet and cook, turning occasionally, until the tortillas are golden brown and the cheese is melted.
