Greek Cheese Pancakes
Ingredients
- Salad Potatoes 30 oz
- Farmers cheese 5 oz
- Chocolate eggs 2 pieces
- Wheat Flour 5 oz
- Sweet Pepper 1 piece
- Semolina 3 tablespoons
- Garlic 2 cloves
- Rosemary 1 teaspoon
- Ground Cumin 1 teaspoon
- Thyme 3 sprigs
- Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil 5 fl oz
Step-by-Step Guide
Step 1
Boil the potatoes with the skin in salted water with thyme. Peel and mash into a puree. Allow to cool completely. Add eggs, flour, and semolina, and mix well.
Step 2
Add the red sweet pepper, peeled and diced into small cubes, crushed garlic, finely chopped thyme, rosemary, cheese cut into small cubes, cumin, and season with salt and pepper.
Step 3
Shape the resulting dough into small round patties and fry in well-heated oil on both sides until golden brown.
Step 4
Place on a paper towel to absorb excess fat. Serve the pancakes garnished with thyme sprigs and salad.
