Gray shrimp croquettes
Ingredients
- Butter 0 oz
- Wheat Flour 5 oz
- Milk 15 fl oz
- Lemon 1 piece
- Whole egg 3 pieces
- Peeled Cooked Shrimp 10 oz
- Parsley 1 bunch
- Breadcrumbs 5 oz
- Olive Oil 15 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the béchamel sauce: In a saucepan over low heat, melt the butter, add the flour, and stir until a smooth mixture forms. Gradually pour in the milk and cook, stirring constantly, until the sauce thickens.
Step 2
Remove the sauce from heat and add the juice of 1/3 of a lemon, 1 egg yolk, shrimp, half a bunch of finely chopped parsley, salt, and pepper. Mix well. Place the mixture in the refrigerator for 2 hours.
Step 3
Shape the croquettes. Dredge them in flour, then dip in the remaining beaten egg yolks, and finally coat with breadcrumbs.
Step 4
Heat the oil in the deep fryer to 180 °C. Fry the croquettes in the hot oil for 6 minutes.
Step 5
Place the cooked croquettes on a paper towel for a few seconds and serve immediately while hot.
