Ingredients

  • Olive Oil 3 tablespoons
  • Leek 2 pieces
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Medium-dry sherry ½ cup
  • Chopped Sage Leaves 1 tablespoon
  • Butternut Squash 20 oz
  • Apple 20 oz
  • Grated Pecorino Pepato Cheese 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Slice the leeks into thin rings (only the white part). Peel the pumpkin and cut it into thin slices. Peel the apples and remove the cores, then cut them into small pieces.

Step 3

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced leeks and 2 tablespoons of water. Season with salt and pepper. Cook, stirring, until golden brown, about 10 minutes. Pour in the sherry and sprinkle with sage. Cook until lightly caramelized, about 3 minutes. Remove from heat.

Step 4

In a baking dish, layer the pumpkin, season with salt and pepper, then add the leeks. Next, layer the apples and brush with olive oil.

Step 5

Cover the dish with foil and bake for about 45 minutes until tender.

Step 6

Remove the foil, sprinkle with cheese, increase the temperature to 445°F, and bake for another 10 minutes until golden brown.

Step 7

Cool for 10 minutes and serve.
