Ingredients
- Milk 10 fl oz
- Wheat Flour 5 oz
- Salt 1 teaspoon
- Farm fresh eggs 4 pieces
- Mustard Greens 1 teaspoon
- Grated Pecorino Pepato Cheese 5 oz
- Butter 0 oz
- Garlic 2 cloves
- Chopped Sage Leaves 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a saucepan, heat the milk and butter until boiling.
Step 2
Add the flour, salt, and pepper, and mix thoroughly.
Step 3
Remove from heat, mix well, and return to medium heat, stirring for a couple of minutes.
Step 4
Let it cool slightly and beat in the eggs one at a time, mixing well.
Step 5
Then add the cheese and mustard. Line a baking sheet with parchment paper.
Step 6
Using two teaspoons, place the gougères on the baking sheet, leaving some space between them.
Step 7
Place the baking sheet in a preheated oven at 430°F (428 degrees Fahrenheit), and when the pastries rise, reduce the temperature to 375°F (374 degrees Fahrenheit) and bake for another 12 minutes until golden brown.
Step 8
Heat the butter with garlic (you can use a microwave), add the herbs, and brush the gougères.
