Golden Autumn Cookies

Description
The cottage cheese should be soft and not sour; I used a brand similar to 'Homemade Product' with 18% fat content.
Ingredients
- Margarine 5 oz
- Semi-soft cream cheese 10 oz
- Wheat Flour 10 oz
- Salt a pinch
- Sugar 5 oz
Step-by-Step Guide
Step 1
Take the margarine out of the freezer.
Step 2
Sift the flour.
Step 3
Grate the margarine on a coarse grater, mix it with the flour and a pinch of salt.
Step 4
Add the cottage cheese and knead the dough. Knead it not too long, otherwise the margarine will start to melt and stick to your hands, which will lead to an undesirable increase in the amount of flour.
Step 5
From the total amount of flour, about 1 tablespoon will be used for dusting the table. The finished dough should not be too soft or too stiff.
Step 6
To enhance the flavor of the future masterpiece, place it in the refrigerator for 10 minutes to allow the gluten to swell and the margarine to freeze.
Step 7
Preheat the oven to 430°F.
Step 8
After 10 minutes, take out the dough — it has become a little softer and more pliable. Roll out the dough to a thickness of about 8 mm, cut into circles, squares, etc. Sprinkle the top of the pieces with sugar and fold them in half. Sprinkle with sugar again. Bake in the preheated oven for 35 minutes until golden brown — the color of autumn leaves.
