
Goat Cheese Soufflé with Thyme

Description
Cheese – you can use soft goat cheese, which is sold in elongated bars, but I usually take regular hard goat cheese and grate it finely. It's more a matter of price than taste, so the choice is yours.
Ingredients
- Goat cheese 15 oz
- 10% cream 5 fl oz
- Parmesan Cheese 0 oz
- Chocolate eggs 6 pieces
- Thyme 1 tablespoon
- Salt to taste
- Butter 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Separate the egg whites from the yolks. Mix the yolks well with the goat cheese and cream. Add a pinch of salt and pepper, and 1 teaspoon of thyme leaves.
Step 3
Whip the egg whites with a pinch of salt until they are almost like meringue.
Step 4
Gently but firmly fold the egg whites into the cheese-yolk mixture.
Step 5
Grease 6 small baking ramekins with butter, sprinkle with finely grated Parmesan, and fill with the resulting mixture.
Step 6
Sprinkle the remaining cheese and thyme leaves on top.
Step 7
Place in the oven for 15–20 minutes. The soufflé should rise and become golden.
Step 8
Serve immediately to prevent it from collapsing.
