Ingredients

  • Chili Flakes ¼ teaspoon
  • Garlic 1 clove
  • Spinach 5 oz
  • Citrus Zest Mix 1 teaspoon
  • Gnocchi 15 oz
  • Meyer Lemon Juice 1½ teaspoons
  • Grated Pecorino Pepato Cheese 0 oz
  • Salt to taste

Step-by-Step Guide

Step 1

In a skillet or saucepan with a heavy bottom, combine red pepper flakes, crushed garlic, salt (¼ teaspoon), and cook covered for about 5 minutes.

Step 2

Add spinach to the skillet. Stirring, cook over low heat until the spinach wilts. Then remove from heat and mix with lemon zest and juice.

Step 3

Meanwhile, drop the gnocchi into boiling water, add salt (3 teaspoons per 6 liters), and cook for 1 minute less than indicated on the package. When the gnocchi are ready, drain them, reserving 1 cup of the cooking water.

Step 4

Pour the gnocchi into the saucepan with spinach, sprinkle with cheese, and toss thoroughly. If the mixture is too dry, add a little of the reserved cooking water and serve immediately.
