Gluten-Free Apple Pancakes

Ingredients
- Apple 1 piece
- Vegetable Oil 5 fl oz
- Meyer Lemon Juice 1 tablespoon
- Activated Baking Soda 1 teaspoon
- Honey 2 tablespoons
- Gluten-Free Baking Mix 5 oz
Step-by-Step Guide
Step 1
Add all ingredients to a blender and mix until smooth.
Step 2
In a small amount of oil or without oil if you have a good non-stick pan, fry the pancakes. Use 1-1.5 tablespoons of the batter for each pancake.
Step 3
Cook on medium heat for 2-3 minutes on each side.
Step 4
Top with your choice of filling (fruits, nuts, seeds, nut butter, maple syrup, etc.)
