Glazed shrimp with peppers and cilantro
Ingredients
- Tiger shrimp in brine 20 oz
- Cilantro 3 tablespoons
- Green peppercorns a pinch
- Sugar a pinch
- Garlic 3 cloves
- Fish Oil 4 tablespoons
- Vegetable Oil 4 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Rinse the shrimp, peel them while leaving a small amount of shell on the tail. Make a shallow cut along both sides of the shrimp's tail; remove the black intestinal thread. The cuts will allow the shrimp to curl beautifully when frying. Pat them dry with paper towels.
Step 2
Heat a wok or a regular deep frying pan. Add the sugar; as soon as the sugar starts to melt, add the shrimp. Keep the heat high. Stir the shrimp vigorously with the sugar; add the finely chopped garlic and pour in the oil.
Step 3
Crush the peppercorns into large flakes using a mortar and pestle or a simple tool: a cutting board and the bottom of a sturdy glass. The effect is similar. Add the pepper to the wok.
Step 4
Pour in the sauce, cilantro, and salt; stir for another two to three minutes.
