Ingredients
- Olive Oil 1 tablespoon
- Spanish onions 15 oz
- Mango 2 cups
- Tomatoes 5 oz
- Garlic 6 cloves
- Grated Ginger Root 3 tablespoons
- Orange juice concentrate 0 fl oz
- Lime Juice 5 fl oz
- Sherry 0 fl oz
- Brown Sugar 3 tablespoons
- Vinegar essence 3 tablespoons
Step-by-Step Guide
Step 1
Heat the olive oil over medium heat in a large skillet. Add the finely chopped onion and sauté for 7 minutes, stirring occasionally.
Step 2
Add the finely chopped mango, finely chopped tomatoes, ginger, and minced garlic. Cook for another 5 minutes.
Step 3
Add the orange juice, lime juice, sherry, sugar, and vinegar, bring to a boil, reduce the heat, and simmer for 20 minutes.
