Georgian Eggplant Appetizer
Ingredients
- Eggplants ½ piece
- Spanish onions ½ head
- Olive Oil 6 teaspoons
- Marinated cherries 10 pieces
- Suluguni Cheese 0 oz
- Dried Rosemary ½ teaspoon
- Fresh basil leaves ½ teaspoon
- Mild Chili Spice to taste
- Ocean salt to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Slice the eggplant into rounds about 2 cm thick.
Step 2
Cut the onion into rings about 5 mm thick.
Step 3
Place the eggplants on a baking sheet lined with parchment paper.
Step 4
Brush them with mustard oil (about half a teaspoon for each piece).
Step 5
Salt them.
Step 6
Top with onion rings.
Step 7
Next, add sliced cherry tomatoes.
Step 8
Slice the suluguni cheese into pieces about 7–8 mm thick.
Step 9
Sprinkle the tomatoes with dried basil and oregano, then top with cheese.
Step 10
Season with chili pepper.
Step 11
Send to a preheated oven at 355°F.
Step 12
After 20 minutes, transfer to a plate and let the appetizer cool slightly. Optionally, garnish with a sprig of herbs.
