Description
This mayonnaise is perfect for any cold meat, cod, potatoes, and other vegetables such as artichokes, turnips, leeks, or carrots.
Ingredients
- Garlic 3 heads
- Whole egg 2 pieces
- Safflower Oil 15 fl oz
- Champagne Vinegar 2 tablespoons
Step-by-Step Guide
Step 1
Crush the garlic with salt in a mortar. Transfer to a bowl, add the egg yolks, and whisk lightly with a whisk or fork. Then, while continuously whisking, gradually pour in the oil.
Step 2
Before serving, stir in the vinegar or lemon juice and 1–2 tablespoons of warm water.
