Ingredients

  • Puff Pastry 10 oz
  • Spinach 10 oz
  • Pistachios 0 oz
  • Feta cheese 5 oz
  • Grated Pecorino Pepato Cheese 0 oz
  • Nutmeg to taste

Step-by-Step Guide

Step 1

Place the spinach in a pot, cover with a lid, and let it stew in its own juice for 2–3 minutes. Stir, drain in a colander, and squeeze out the juice thoroughly. Season with nutmeg.

Step 2

On a floured surface, roll out the pastry to a thickness of 3 mm. Cut out 6 circles and place them on a baking sheet.

Step 3

Chop the spinach and spread it evenly over the surface of the circles, leaving a thin edge around the border.

Step 4

Evenly sprinkle the rounds with diced feta cheese and pine nuts. Place on a greased baking sheet and bake for 10–12 minutes until golden brown. Remove the rounds from the oven and sprinkle with grated Parmesan. They can be served hot or cold, according to preference.
