Fusilli with Pesto Sauce
Ingredients
- Basil 2 bunches
- Garlic 2 cloves
- Pistachios 5 oz
- Grated Pecorino Pepato Cheese 10 oz
- Olive Oil 5 fl oz
- Water 0 fl oz
- Cream 22% 5 fl oz
- Salt 1 teaspoon
- Ground Black Pepper ½ teaspoon
- Pasta shells 20 oz
- Marinated cherries 10 oz
- Pizza Mozzarella Cheese 5 oz
Step-by-Step Guide
Step 1
Make the pesto: blend basil, garlic, pine nuts, Parmesan, cold water, cream, salt, and pepper in a food processor for about 30 seconds. Add olive oil, mix, and set aside.
Step 2
Cook fusilli al dente, or 3-4 minutes less than the package instructions, then drain the pasta.
Step 3
Cut the cherry tomatoes in half.
Step 4
In a baking dish with thick walls, mix fusilli with cherry tomatoes and pesto.
Step 5
Top with mozzarella balls and grated Parmesan.
Step 6
Bake in the oven covered with foil at 200°C for 15-20 minutes, or until the mozzarella cheese melts.
Step 7
Serve with additional Parmesan and fresh basil.
